Ingredients
– 4 salmon fillets (skinless)
– Salt and pepper, to taste
– ½ cup all-purpose flour
– 2 tablespoons olive oil
– 2 tablespoons unsalted butter
– ¼ cup fresh lemon juice
– ¼ cup chicken broth (or white wine)
– 2 tablespoons capers, rinsed and drained
– 2 tablespoons fresh parsley, chopped (for garnish)
– Lemon slices (for garnish)
Instructions
Follow these simple steps to prepare your amazing Salmon Piccata:
1. Season the Salmon: Pat the salmon fillets dry with paper towels. Season both sides with salt and pepper to taste.
2. Dredge in Flour: Place the flour on a shallow plate. Dredge each salmon fillet in the flour, shaking off any excess.
3. Heat the Pan: In a large skillet, heat the olive oil and 1 tablespoon of butter over medium-high heat until hot.
4. Cook the Salmon: Add the salmon fillets to the skillet. Cook for about 4-5 minutes on each side, or until golden brown and cooked through. Remove the salmon from the skillet and set aside.
5. Make the Sauce: In the same skillet, add the lemon juice and chicken broth (or white wine). Scrape the bottom of the skillet to release any browned bits. Bring to a simmer.
6. Add Capers: Stir in the capers and cook for an additional 1-2 minutes, allowing the sauce to reduce slightly.
7. Finish the Sauce: Remove the skillet from heat and stir in the remaining tablespoon of butter until melted and incorporated.
8. Return Salmon to the Pan: Place the salmon fillets back into the skillet, spooning the sauce over the top.
9. Garnish: Sprinkle with fresh parsley and garnish with lemon slices.
10. Serve Immediately: Enjoy your delicious Salmon Piccata while it’s hot!
