Ingredients
– 1 bag (32 oz) frozen tater tots
– 6 large eggs
– 1 cup milk
– 1 cup cooked and crumbled breakfast sausage (or bacon)
– 1 cup shredded cheddar cheese
– 1 cup diced bell peppers (red, green, or both)
– 1 cup diced tomatoes
– 1 teaspoon salt
– ½ teaspoon black pepper
– 1 tablespoon olive oil
– Optional: chopped green onions or fresh herbs for garnish
Instructions
Creating the Tater Tot Breakfast Bowl is a breeze if you follow these simple steps:
1. Preheat the Oven: Preheat your oven to 425°F (220°C).
2. Prepare the Tater Tots: Spread the frozen tater tots in a single layer on a baking sheet. Bake for about 25-30 minutes, or until golden brown and crispy, flipping halfway through.
3. Cook the Sausage: In a skillet over medium heat, add the olive oil. Once hot, add the crumbled sausage and cook until browned. Remove from heat and set aside.
4. Whisk the Eggs: In a bowl, whisk together the eggs, milk, salt, and black pepper until well combined.
5. Sauté the Vegetables: In the same skillet used for the sausage, add the diced bell peppers. Sauté for about 3-5 minutes, or until they are softened.
6. Scramble the Eggs: Pour the egg mixture into the skillet with the sautéed peppers. Cook over medium heat, stirring gently until the eggs are just set and fluffy.
7. Assemble the Bowls: Once the tater tots are done, remove them from the oven. In serving bowls, layer the crispy tater tots, followed by the scrambled eggs, cooked sausage, diced tomatoes, and shredded cheese.
8. Melt the Cheese: Return the assembled bowls to the oven for a couple of minutes to melt the cheese.
9. Garnish: Remove the bowls from the oven and garnish with chopped green onions or fresh herbs if desired.
10. Serve Immediately: Enjoy your Tater Tot Breakfast Bowl while it’s hot!
